This vegan and gluten-free recipe is based on ribollita, a hearty dish popular among Tuscany's traditional farming communities. The warming flavors combine in a simmered sauce with cannellini beans, plenty of cavolo nero, and Dorset sourdough bread to soak up the juices. It's rich in protein, high in fiber, and easy to enjoy after a long day.
